Homemade Poppy Seed Dressing
This is my favourite dressing and its taken me a few years to get it just right. I don't often measure my ingredients so it took me a while to decide on the correct ones to share with you.

Shopping and Prep:
In a large bowl place:
Homemade Poppyseed Dressing
Ingredients
- 1 teaspoon honey mustard
- 1/3 cup vegetable oil
- 1/2 teaspoon salt
- 1/2 cup thick yogurt, plain
- 1/4 cup apple cider vinegar
- 1/4 cup splenda or granulated sugar
- 1/4 cup sweet white onion
- 1 tablespoon poppyseeds
Instructions
With a hand blender, mix the liquid ingredients and onion until creamy and smooth.Stir in poppyseeds.Store in Fridge up to one week, stir or shake before use.

In a large bowl place:
- Baby spinach, a large handful per person.
- 1 cup of strawberries, washed, stemmed, and sliced.
- 1/2 a green onion per person, chopped
- 1-2 tablespoons of Poppy Seed Dressing, per person
Optional Salad Additions:
- Spring Mix or other Lettuces
- 2 tablespoons of toasted almond slivers.
- 1 tart green apple
- Other vegetables: cucumber, mushroom, red pepper, carrot.
- Crispy, Fried Chow Mein noodles
