White Chocolate Golden Graham Chews
The best part is smashing them up to eat!


Chocolate is one of my favourite mediums to work with.  This recipe was born from an experiment with leftover melted chocolate about three Christmases ago.  I wondered if people would like chocolate covered trial mix? With a few simple ingredients folded in, this recipe became an instant favourite. These didn't last long enough for me to get a pretty picture of what they look like plated.


White Chocolate Golden Graham Chews 

Melt in a double boiler:

  • 2 -200 gram packages of white chocolate chips
  • 1 tablespoon of canola oil
  • 1 cup of mini marshmallows

Combine in a big bowl:

  • 5 cups of Golden Grahams cereal
  • 1 1/2 cups of dried cranberries
  • 1/2 cup of broken pretzel pieces

Use a double boiler to melt chocolate and marshmallows:
my method includes a heat safe glass bowl
over a medium saucepan filled half way with water.
The marshmallows don't have to be 100% melted, but add chew to the chocolate.
Have the crunchy ingredients ready in a large bowl because your
chocolate won't be waiting patiently.
Pour the melted chocolate mixture over the golden graham
mixture and mix well.  Pour it onto a large cookie sheet
lined with parchment paper.

Bonus Recipe:

Failures don't have to be wasted!  I got distracted by my three
year old and ended up having to make
White Chocolate Fudge instead.
What happens when you let the chocolate and marshmallow mixture sits too long, or if water gets into the mixture? It ceases hard as a rock! Nothing will bring it back to a melted state.  I quickly pressed it into a 2 cup aluminum pan and sprinkled with the peppermint candy I had smashed for my chocolate candy cane bark. When it was cooled I cut into 1 inch pieces and gave to the ladies at work.
