Strawberry Rice Krispie Squares {Gluten Free Recipe}

While making Rice Krispie Squares for Valentines Day, I was reading the ingredients on the marshmallow package.  Seeing gelatin made me think of boxed gelatin powder, you know the wobbly bowls of fruit flavoured stuff we ate as kids?  We don't really eat it here but I keep it on hand to make my fruity play clay.  I decided to experiment a bit by adding a few teaspoons of strawberry gelatin powder to my melting marshmallows and margarine.  I think they turned out yummy!

Strawberry Flavoured Rice Krispie Squares

What I Used:

4 cups of mini marshmallows
1/4 cup margarine
1-2 Tablespoons of flavoured gelatin dessert powder*
6 cups of Rice Krispies* {Brown Rice Gluten Free}

non-stick cooking spray
9x13 glass dish

What I Did:

  1. Melt marshmallows and margarine in a large pot.
  2. Stir frequently.
  3. When the marshmallows are nearly melted.
  4. Sprinkle in the powdered gelatin and stir well.
  5. Add Rice Krispies cup by cup.
  6. When the cereal is evenly coated in marshmallow, pour into a large pan that has been sprayed with non-stick cooking spray.
  7. Spray your spatula with cooking spray to help you spread it out evenly in the pan.

Note: Always read the packaging and be sure the products you are using are gluten-free.

Optional:
~ Use cookie cutters to make special shapes.

~ Use any other flavoured of powdered gelatin as long as it is the kind you would use to make instant dessert.

~ Sprinkle finished squares with coarse, coloured sugar or sprinkles.
