Simple and Tasty Meatball Recipe. {Carnivore Freezer Meals}
I have been making this recipe for many years with little change to the method. That may sound boring to you, but for me this is a go-to staple that inspires many Supper ideas. Now that I'm back to work there are nights I only have 30 minutes to cook. I can prepare these on short notice and feel good about what we are eating. With the price of ground beef coming down for the Summer bbq season, we stocked up on about 12 pounds of mince to make our famous burgers and meatballs. This recipe does not include eggs, nor does it call for much salt. I find these ingredients make a tough meatball when it is going to be frozen. I also don't overcook it in the pre-cook stage. Once prepped, baked, and cooled, the meat was wrapped in plastic wrap and heavy duty freezer bags. They are good for 3 months in the freezer. I pull the portions out of the freezer to defrost (on a plate in the fridge) before I leave for work. Or skip the defrost stage and pop them into a slow cooker on low with my favourite BBQ sauce.
Basic Meatball Recipe For Freezing:
Place 3 pounds of beef in a glass bowl.
Add 3 tablespoons of Mrs. Dash,
1 cup of bread crumbs with 3 tablespoons of milk sprinkled over,
1 teaspoon of salt,
1/4 cup of grated onion
3 lbs of beef yields approx 35 to 40 1.5 ounce meatballs. |
- Mix ingredients well,
- Form into 1.5 ounce balls and place on foil lined baking pan,
- Bake for 12-15 minutes in a pre-heated 350 degree oven. *I pull them out of the oven when the internal temp is 145-150 degrees.
- Let them cool completely and remove from pan, place into freezer bags.
- Lay flat in freezer.
- When I want to cook them, I remove from freezer to defrost in fridge before I go to work. Or use quick defrost function on my microwave.
- Cook in fry pan until an internal temp of 160 degrees is reached.
