Comfort Food Series: Oat Squares With PB & Chocolate Icing.

 Once in a while I try to remaster a recipe and it fails.  This is one of those times.  I took one of my mom's recipes and tried to make it with Equal granulated instead of brown sugar called for in the ingredients list.  It tasted good, but effected the structure of the oat base.  It's a good thing these weren't intended for a special occasion.  They were nearly impossible to remove from the pan without crumbling to bits.  I haven't given up on it though and may try to use an aluminum pan next time to help get the squares out of the dish.  I may also try using half brown sugar and half Equal to see if the chewiness of the cookies returns.  In spite of the failure, it didn't keep me from eating 1/3 of the pan in one night.


Ingredients List:

Crust
3 cups rolled oats
1 1/2 cups unsweetened coconut
1 cup softened butter
1 cup Equal granulated
1 egg

Icing
1 cup semi-sweet chocolate chips
1 1/2 cups crunchy peanut butter

Press oat mixture in a greased pan and
bake for 15 minutes at 350F.

Microwave on MED power: 1 cup of semi-sweet chocolate
chips  with 1 1/2 cups of crunchy peanut butter.

 Stir every 30 seconds until
chocolate and PB are smooth. Pour over the baked
oat crust and spread over the whole surface.  Chill in fridge
for 2 or more hours before slicing.

Crust
4 cups rolled oats
1 1/4 cups softened butter
1/2 cup white sugar
1 cup brown sugar

Icing
1 cup of Milk Chocolate Chips
1 cup of Smooth Peanut Butter
