I originally used the instructions specified for 7-8 pancakes, but knew it wouldn't be enough batter for my usual batch. I alternated adding water and dry mix until I got the batter up to the 3 cup mark on my bowl. Next time around I will follow the directions specified for 14-18 pancakes. I added fresh blueberries to the prepared batter and let it rest as I normally do.
I ended up with 11 pancakes, served them up, and waited for feedback from my toughest critics. The only difference? They were fluffier than any pancake I've ever made. Now, mine aren't exactly hockey pucks, they are good pancakes if I do say do myself. I asked hubby what he thought of the pancakes, and held my breath while waiting for his answer. He smirked and said; "I know this is a mix, they're lighter. I don't care though, pancakes are pancakes." This is a smart man with thirteen years of training on the fine art of domestic democracy. Princess Destructo plowed through her breakfast and said; "More?" So it seemed as though the PC Buttermilk Pancake Mix passed the picky Family test.
Generally we are the last people to jump into the pool of hype. When it comes to food, we are attached to our favourite foods supplied by favourite brands, or created from my own recipes. I will use the PC Pancake Mix again, but I won't throw away my own recipe just yet. We have become real fans of other President's Choices products around here too. My daughter loves the PC Banana Bread cookies. The PC tagline is "Worth Switching Supermarkets For" and I would have to agree.

Versus
Sunday Morning Blueberry Pancakes.
What I Use:
2 cups flour * 1/2 cup whole wheat + 1 1/2 cups AP flour
2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 Tablespoons of Splenda
1 1/2 to 2 cups milk
1 Large egg, beaten
1 teaspoon Almond Extract
1 cup fresh* blueberries
What I Did:
- Sift together flour, baking soda, baking powder, and salt.
- Whisk milk, Splenda, egg, almond extract for 3 mins. I like to get a lot of air into this mixture.
- Combine liquid mixture with the dry.
- Fold in fresh blueberries- if they were frozen thaw them first.
- Whisk out any lumps and left the batter rest in fridge for 20-30 minutes.
Yield: I get 10 pancakes using a 1/4 cup measure.
