Life Choices Tasting Party: Featuring Fish Taco's with Summer Fresh Salsa.



Fish Taco's Featuring Life Choices Fish Sticks.


Bruschetta-Salsa:
2 large tomatoes, diced (about 1 1/2 cups).
1/2 yellow pepper, diced.
2 green onions, fine slices.
1 teaspoon dried parsley.
1 teaspoon Lemon Pepper Mrs. Dash.
1 pinch salt.
1/2 teaspoon pureed garlic.
1/2 teaspoon crushed red pepper flakes.
1 pinch of sugar or Splenda.
3 teaspoons lime juice.

Home-made Light Tartar Sauce:
1/2 cup fat-free sour cream.
2 tablespoons low-fat Miracle Whip.
1/4 cup sweet pickles, chopped fine.
2 teaspoons of lemon juice.

Other Ingredients:
small tortillas 
lettuce, spinach, or slaw mix (Or your favourite crunchy, shredded vegetables.)
lemon wedges

What I did:
  1. Prepare Salsa and Tartar Sauce the day before, or at least 4 hours before it is needed. The flavours need time to mingle.  Both can be kept up to 3 days in fridge.
  2. Prepare the Life Choices Fish Sticks according to directions. 
  3. Squeeze fresh lemon on fish when it comes out of the oven.
  4. Warm the tortillas briefly in a hot frying pan. I used whole wheat flour, use what you like.
  5. Assemble the taco with one Fish Stick, Salsa, Tartar Sauce, and lettuce as desired.
  6. We like the shredded broccoli slaw mixture instead of lettuce (packaged with shredded broccoli, red cabbage, and carrots). It gives the taco more texture, crunch, and flavour.
  7. Enjoy!
